Asparagus Rolls
- 24 thin asparagus spears trimmed to 5 inch lengths
- 12 slice thin white bread
- 1/2 cup mayonnaise
- 2 tsp lemon juice
- 1 tsp dill weed
- 1 tsp tarragon leaves
- Cook asparagus in boiling water for 1 minute.
- Rinse with cold water.
- Trim crusts from bread slices.
- Flatten slices with a rolling pin.
- Combine lemon juice, mayonnaise, dill weed and tarragon.
- Spread mixture evenly on both sides of bread.
- Place 2 asparagus spears on center of each bread slice.
- Carefully roll up and secure with wooden toothpick.
- Place on baking sheet.
- Bake at 450F for 8 minutes or until golden.
- Remove toothpicks before serving.
