Brother Dave's Chili
- 3 pound stewing beef
- 1 tablespoon corn oil
- 1/2 cup chili powder
- 1 tablespoon salt
- 3 each sweet bell peppers chopped
- 2 large onions chopped
- 2 teaspoons comino ground
- 2 teaspoons paprika
- 2 teaspoons cayenne pepper
- 2 teaspoons oregano
- 2 cups chicken broth
- 12 ounces tomato sauce
- 6 wholes tomatoes
- 1/2 cup masa harina
- 48 ounces vegetable juice cocktail
- 1 tablespoon red pepper flakes dried
- 1 dash bitters
- 1 pinch nutmeg
- Brown the meat, work in the spices, onions, and peppers.
- Simmer about 30 minutes or until it looks good.
- Add tomato sauce, tomatoes, broth and simmer several hours until it looks good.
- Add the Masa to thicken the mix and when it's ready, add the Peychaud's and nutmeg to set it off.
