Minted Limeade
- 8 limes, divided
- 1 cup sugar (to taste)
- 1 bunch of fresh mint
- 5 cups water, divided
- ice
- fresh mint sprig (to garnish)
- Remove zest (green part only) from 4 limes with a vegetable peeler.
- Set limes aside.
- Combine zest with sugar, mint, and 1 cup of the water in a small saucepan.
- Bring to a boil over medium-high heat, stirring to dissolve the sugar.
- Reduce heat to low and simmer gently for 5 minutes.
- Let cool to room temperature.
- Strain into a pitcher.
- Juice all the limes.
- There should be about 1 cup of juice.
- Whisk juice and remaining water into mixture in pitcher.
- If not sweet enough, whisk in additional sugar to taste.
- Fill tall glasses with ice.
- Pour limeade over ice and garnish with sprigs of fresh mint.
