Fruit Oat Cookies
- 3 cup Uncooked oats
- 1 cup All purpose flour
- 1/2 tsp Cinnamon
- 1/2 tsp Baking soda
- 1/2 tsp Sea salt
- 1 cup Honey
- 3/4 cup Unsalted butter
- 1/2 tsp Vanilla extract
- 1 Egg
- 1 cup Chopped hazelnuts/ walnuts/ almonds
- 1 cup Mixed dry fruits
- 1 cup Milk chocolate chip
- Preheat oven to 350AF degrees.
- In a large mixing bowl, combine the oats, flour, cinnamon, soda and salt and set aside.
- Melt the butter over melted heat.
- Continue to cook until the butter solidifies at the bottom of the pan and begin to brown
- Mix whilst cooking the butter and watch carefully to prevent from burning
- Once butter is done remove from the heat and pour into a heat proof medium sized mixing bowl
- Add the honey to the butter and mix until the honey is slightly melted
- Add vanilla extract and egg
- Combine the butter mixture into the flour and oat mixture
- Add the nuts, fruits and chocolate chips
- Using a large spoonful of the dough, place the cookies on a baking sheet
- Bake for about 10-12 mins or until cookies are cooked and the bottom is lightly browned
- Cool and enjoy!
