Chicken Pizzaiola Recipe

  1. (One c. of shredded Mozzarella cheese can be used in place of slices.)

  3. Flatten chicken breasts to 1/4 inch thickness.

  5. Dip each breast in egg, then coat well with crumbs.
  6. 3.
  7. Slowly saute/fry chicken in butter till lightly browned on both sides and chicken is cooked.
  8. Arrange breasts on ungreased pyrex.
  9. 4.
  10. Mix ketchup and oregano.
  11. Divide mix proportionately among the breasts (spread on top of each breast).
  12. 5.
  13. Sprinkle each breast with Parmesan cheese and cover with Mozzarella.
  14. 6.
  15. Bake in oven (350 F.) till cheese melts.
  16. Serve with any pasta and a green vegetable (broccoli, beans, etc.
  17. ).
