Vegan Stuffed Peppers
- 1 cup Orzo
- 20 whole Sweet Mini Bell Peppers
- 2 Tablespoons Sweet Baby Ray's BBQ Sauce
- Cook orzo according to package directions.
- Cover a cookie sheet with aluminum foil.
- Preheat oven to 350 degrees F.
- While the orzo is cooking, slice the tops off and cut the seeds out of each mini bell pepper.
- When the orzo is done, drain and return to the pan.
- Add the bbq auce to the cooked orzo and stir until incorporated.
- Using a spoon, fill each mini bell pepper with about 1 1/2 tablespoons of orzo mixture or until the bell pepper is full.
- Place each filled pepper on the cookie sheet on its side.
- Place in oven and bake for 15 minutes.
- Serve immediately.
