Vegan Stuffed Peppers

  1. Cook orzo according to package directions.
  2. Cover a cookie sheet with aluminum foil.
  3. Preheat oven to 350 degrees F.
  4. While the orzo is cooking, slice the tops off and cut the seeds out of each mini bell pepper.
  5. When the orzo is done, drain and return to the pan.
  6. Add the bbq auce to the cooked orzo and stir until incorporated.
  7. Using a spoon, fill each mini bell pepper with about 1 1/2 tablespoons of orzo mixture or until the bell pepper is full.
  8. Place each filled pepper on the cookie sheet on its side.
  9. Place in oven and bake for 15 minutes.
  10. Serve immediately.
