Rosemary and Mustard Breakfast Sausages

  1. Set rack at lowest position in oven and preheat to 500F.
  2. Heat oil in small skillet over medium-high heat.
  3. Add onion and chopped rosemary; saute until golden, about 10 minutes.
  4. Transfer to medium bowl.
  5. Add sausage, mustard, and generous amount of freshly ground black pepper.
  6. Mix gently.
  7. Form into twelve 2-inch diameter patties.
  8. Arrange sausages on heavy baking sheet.
  9. (Can be made 1 day ahead; chill.

  11. Bake sausages until just cooked through, about 6 minutes.

  14. Transfer sausages to paper towels to drain, then arrange on platter.
