Shrimp Pasta Caesar Salad Recipe

  1. Cook pasta to desired doneness as directed on package.
  2. Drain; rinse with cool water.
  3. In large bowl, combine pasta, shrimp, pea pods, green onions and olives; toss gently to combine.
  4. Pour dressing over salad; toss gently.
  5. Cover; chill 1 to 2 hrs to blend flavors, stirring occasionally.
  6. Add in croutons and cheese to salad; toss gently.
  7. Place 3/4 c. lettuce on each of 8 plates; top each with salad mix.
  8. 8 servings.
  9. TIP: To blanch pea pods, plunge into boiling water for 10 to 15 seconds, then into ice water.
