Slow Cooked Carnitas
- 1 pound Boneless Pork Ribs
- 1 package Taco Seasoning
- 2 whole Jalapenos
- 4 cloves Garlic
- 4 Tablespoons Vegetable Oil
- 2 cans Any Light Beer
- 1 package Corn Tortillas
- Slice the pork ribs into bite size chunks.
- Coat in the taco seasoning.
- You dont have to use taco seasoning, you can use a fajita seasoning or whatever seasoning you normally use for tacos.
- Im lazy and love prepackaged things.
- Slice 2 jalapenos in half and smash the 4 garlic cloves.
- Heat oil in a dutch oven or a large pot.
- Brown pork on all sides.
- You might need to work in batches; dont over crowd the pot.
- Once all the meat is browned, return to the pot and cover with the 2 cans of beer.
- You might need to add a little water or broth if the meat isnt fully covered.
- Toss in the jalapenos and garlic cloves.
- Bring to a boil, then reduce to a low simmer.
- Simmer covered for at least 2 hours.
- You want the carnitas to be tender and falling apart.
- Once they are tender, uncover and turn the heat up to reduce sauce.
- Serve with corn tortillas, chopped onion, tomatoes and any other garnish you like.
- Enjoy!
