Indian-Spiced Salmon Bites with Curry Yogurt Dip

  1. Heat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Curry Yogurt Dip: Combine ingredients in a bowl until blended.
  3. Transfer dipping sauce to a small serving bowl.
  4. Salmon Bites: On waxed paper, combine peppercorns and garam masala.
  5. Dip one side of each salmon cube into spice mixture to lightly coat.
  6. Sprinkle cubes with salt.
  7. Spray a large nonstick skillet with cooking spray and heat over medium-high heat.
  8. Place salmon, spice side down, in hot skillet.
  9. Cook 2 minutes, or until bottoms are lightly golden (top part of salmon will still be raw).
  10. Transfer salmon, cooked side up, to prepared baking sheet.
  11. Bake 4 minutes, or until medium-rare in middle.
  12. Place each salmon bite on a cucumber round.
  13. Serve warm with Curry Yogurt Dip.
