Vickys Savoury Cauliflower 'Rice'

  1. Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)
  2. Put the mixture into a saucepan with the cumin and turmeric and stir to coat
  3. Add the stock and sweetcorn and bring to a simmer.
  4. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes
  5. Season well with pepper and some salt and serve immediately
