Grilled Loaded Potato Skins

  1. Note: You can use as many potatoes as you like.
  2. I typically start with 6.
  3. Remember, each potato makes 2 halves!
  4. Scrub and clean the potatoes.
  5. Bake potatoes in a pre-heated 350 degree oven until fork-tender, approximately 1 hour.
  6. Heat outdoor grill to medium High.
  7. Remove potatoes from oven and cut each in half.
  8. Allow potatoes to cool slightly.
  9. Using a spoon, carefully scoop the potato flesh out of the skin, leaving approximately 1/2 inch thick skin/shell.
  10. Brush the cut side of the skins with melted butter (or spray them with nonstick cooking spray).
  11. Place potatoes, cut/scooped side down onto your hot grill.
  12. Grill until golden brown and crispy, approximately 4 minutes.
  13. (Watch these suckers!
  14. they can burn fast!)
  15. Flip the skins over.
  16. Sprinkle with cheese.
  17. Grill until cheese is melted (2-4 minutes).
  18. Serve Immediately with your favorite potato toppings.
