Crunchy Gingerbread Muffins Recipe
- 1 3/4 c. flour
- 1/2 c. brown sugar
- 1/2 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/4 teaspoon cloves
- 1/2 teaspoon salt
- 2/3 c. lowfat milk
- 1/2 c. oil
- 1/4 c. molasses
- 2 Large eggs
- Combine all dry ingredients; stir well to break up brown sugar.
- Beat together liquid ingredients and stir into dry mix just till moistened.
- Don't over stir.
- Spoon batter into 12 paper lined muffin c.. Sprinkle about 1 tsp.
- sugar over each muffin.
- Bake at 375 degrees for 15-18 min.
