Tomato and Bean Bruschetta

  1. Heat a large nonstick skillet over medium heat.
  2. Coat pan with cooking spray.
  3. Add tomatoes and garlic, cook 2 minutes stirring constantly.
  4. Add cannellini beans,salt and red pepper to pan, mashing beans with a fork.
  5. Cook 1 minute or until throughly heated.
  6. Remove from heat.
  7. Spread bean mixture evenly over each bread slice, drizzle each with 1/2 tspn extra virgin olive oil, and then top with each with 1 1/2 tspns chopped basil.
