8 Minute Light N Fruity Pie Recipe
- 1 pkt (3 ounce.) Gelatin, any flavor
- 2/3 c. Boiling water
- 2 c. Ice cubes
- 31/2 c. or possibly 8 ounce. container Whipped Topping, thawed
- Fruit (Optional - see prep)
- 8 x or possibly 9-inch Graham Cracker Crumb Crust
- Completely dissolve gelatin in boiling water, stirring about 3 min.
- Add in ice cubes and stir constantly till gelatin is thickened, about 2 or possibly 3 min.
- Remove any unmelted ice.
- Using wire whip, blend in whipped topping; then whip till smooth.
- Mix in fruit.
- Chill, if necessary, till mix will mound.
- Spoon into pie crust.
- Refrigerate3 hrs.
- *SUGGESTED FRUITS: 1 c. diced peeled pitted fresh peaches or possibly apricots 1 c. fresh rasberries or possibly blueberries 1 c. (8 3/4 ounce.)
- apricots or possibly sliced peaches, liquid removed and diced 1 can (8 1/4 ounce.)
- crushed pineapple in syrup, liquid removed 1 can (8 1/4 ounce.)
- fruit cocktail, liquid removed
