Fluffy Lime Pie

  1. Beat yolks until thick.
  2. Gradually add sugar; beating constantly.
  3. Add lime rind and juice; mix well.
  4. Beat egg whites in a separate bowl until stiff peaks form.
  5. Gently fold into lime mixture.
  6. Spoon mixture into shell.
  7. Bake at 325F for 25 minutes.
  8. Cool to room temperature and chill for 3 hours.
  9. Top with whipped cream.
