Beans, Greens And Sausage Soup Recipe
- 1 tbsp. vegetable oil
- 12 ounce. sweet Italian sausage, cut in 1 inch pcs
- 1 lg. onion, minced
- 1 teaspoon chopped garlic
- 3 1/2 c. chicken broth
- 1 (19 ounce.) can cannellini (white kidney beans), liquid removed
- 1 (16 ounce.) can tomatoes, undrained, tomatoes broken up
- 1/4 teaspoon pepper
- 6 c. escarole, about 8 ounce.
- Parmesan cheese
- NOTE: Sausage may be substituted with grnd turkey.
- Heat oil in large heavy pot or possibly Dutch oven.
- Add in sausage and cook over medium high heat about 10 min till browned.
- Remove to paper towels with slotted spoon to drain.
- Pour off all but 1 Tbsp.
- drippings.
- Add in onion and garlic and cook over medium heat stirring occasionally, till onion is translucent/soft.
- Add in broth, beans, tomatoes, pepper and liquid removed sausage.
- Bring to a boil.
- Add in escarole, reduce heat, cover and simmer 10 min or possibly till escarole is tender.
- Sprinkle with cheese upon serving.
