Kinako Roasted Soy Flour Bagels
- 220 grams Bread flour
- 25 grams Sugar
- 3 grams Salt
- 30 grams Kinako
- 80 ml Water
- 80 ml Milk
- 3 grams Dry yeast
- 1 tbsp Honey (for boiling)
- 1 Kinako, granulated sugar
- Put the bread dough ingredients in a bread maker, and wait until the 1st rising is finished.
- If you are kneading the dough by hand, refer to Steps 1 - 11 of.
- When the dough is ready, divide into 6 portions (78 g each).
- Place in a tray, and let them rest for about 10 minutes.
- Roll out with a rolling pin into 25 cm oval shapes.
- Fold the top and bottom flaps to meet in the middle, and pinch the seams.
- Place the seams up, and press one edge down to make a fan shape, then make the other edge thinner.
- Make rings, and wrap the thin end with the fan shaped-end, then close the seams.
- Arrange the bagels on a baking sheet, and allow them to rise for about 15 minutes at 32-34C.
- Boil water.
- Add 1 tablespoon of honey and dissolve.
- When the water starts to boil, turn down the heat to low, and put the bagels in one at a time.
- Boil each side for 20 seconds.
- Sprinkle with the combined kinako and granulated sugar.
- Bake in the preheated oven for about 14 minutes at 180C, and it's done.
