Pavlova.
- 2 egg whites
- 100 g caster sugar
- 1 tablespoon cornflour
- 1 teaspoon white vinegar
- 150 ml whipping cream
- 3 passion fruit
- red currants (fresh)
- Preheat oven to 200 degrees Celsius Prepare baking tray lined with baking paper.
- Put egg whites in a bowl with vinegar.
- In a separate bowl, mix cornflour and sugar.
- Prepare a tablespoon.
- Beat egs whites on high until soft peaks form, then add the sugar mixture one tablespoon at a time, waiting for each tablespoon to become thoroughly incorporated before adding the next.
- Beat until hard, glossy peaks form.
- Spoon into 4 individual mounds on the paper.
- Put them in the oven and immeditely turn the heat down to 110-120 degrees Celsius.
- Bake for 15 minutes.
- Switch off the oven and leave them in to cool.
- Beat whipped cream until firm peaks form.
- Put each meringue onto an individual plate.
- Dollop cream on top, then passion fruit and red currants.
- Enjoy.
