Pavlova.

  1. Preheat oven to 200 degrees Celsius Prepare baking tray lined with baking paper.
  2. Put egg whites in a bowl with vinegar.
  3. In a separate bowl, mix cornflour and sugar.
  4. Prepare a tablespoon.
  5. Beat egs whites on high until soft peaks form, then add the sugar mixture one tablespoon at a time, waiting for each tablespoon to become thoroughly incorporated before adding the next.
  6. Beat until hard, glossy peaks form.
  7. Spoon into 4 individual mounds on the paper.
  8. Put them in the oven and immeditely turn the heat down to 110-120 degrees Celsius.
  9. Bake for 15 minutes.
  10. Switch off the oven and leave them in to cool.
  11. Beat whipped cream until firm peaks form.
  12. Put each meringue onto an individual plate.
  13. Dollop cream on top, then passion fruit and red currants.
  14. Enjoy.
