Dark and Stormy
- 1/2 ounce John D. Taylors Velvet Falernum liqueur
- 1/2 ounce freshly squeezed lime juice
- 1 lime wheel
- 4 ounces Spicy Ginger Beer (page 156) or Fever-Tree ginger beer
- 2 ounces Goslings Black seal rum
- Pour the liqueur and juice into a Collins glass.
- Add large cold ice cubes and the lime wheel.
- Cover the glass with a small shaker and shake briefly.
- Fill with the ginger beer to one inch below the rim.
- Slowly layer the rum on top.
- Dominant Flavors: ginger and molasses
- Body: light, refreshing
- Dryness: medium with ginger dryness
- Complexity: robust
- Accentuating or Contrasting Flavors: clove and bitterness from lime
- Finish: medium with ginger overtones
- Glass: Collins
