Cheesy-Onion Soup

  1. In a large saucepan saute onion and pinch cayenne pepper in butter until the onions are just lightly golden (about 12 minutes, can add in 1 teaspoon sugar to speed up the browning process).
  2. Stir in flour and salt until blended.
  3. Gradually add half and half cream until blended.
  4. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened.
  5. Season with ground black pepper to taste.
  6. Stir in Colby or Monterey Jack cheese until melted.
  7. Ladle into bowls, sprinkle with parmesan cheese and croutons.
