Horta (Greek Dandelion Greens)
- 1 1/2 lemon, juice
- 4 tbsp olive oil
- 1 sea salt (as desired)
- 4 bunch dandelion greens
- 1.
- Trim and wash greens thoroughly.
- Soak in bowl to remove sand/dirt (about three times till there is no more dirt remaining in bowl).
- Fill pot half way with water, lightly salt and bring to boil.
- Add greens and let simmer with lid of pot slightly ajar till tender
- Once ready remove from pot and drain water.
- Drizzle with oil and lemon.
- Can be served immediately or at room temperature as a salad
