Stuffed bellpeppers
- 4 each Bellpepper
- 1 box Uncle Ben's rice of your choice (I like wild)
- 1 each small onion, diced
- 1/2 cup mushrooms, chopped
- 1 can diced tomatoes
- 1 lb ground beef
- 1 salt (to taste)
- 1 black pepper (to taste)
- 6 quart water
- 1/2 stick butter
- 1 1/2 cup shredded cheese of your choice
- Preheat oven to 400
- Hollow out bellpepper by either cutting off top or slice length-wise and then deseed (I recommend slicing length-wise for better serving portions)
- Boil bellpeppers for 3 to 4 minutes in slightly salted water
- Remove bellpeppers and shock in an ice bath
- Saute onion and mushrooms in butter
- Prepare rice as box instructs
- Brown and drain ground beef
- Mix onion, mushrooms, rice, ground beef, and tomato together in a bowl while hot with 1/2 cup cheese
- Stuff bellpeppers with mix and top with remaining cheese.
- Place in oven for 10-12 minutes (until cheese is melted throughly
