Stuffed bellpeppers

  1. Preheat oven to 400
  2. Hollow out bellpepper by either cutting off top or slice length-wise and then deseed (I recommend slicing length-wise for better serving portions)
  3. Boil bellpeppers for 3 to 4 minutes in slightly salted water
  4. Remove bellpeppers and shock in an ice bath
  5. Saute onion and mushrooms in butter
  6. Prepare rice as box instructs
  7. Brown and drain ground beef
  8. Mix onion, mushrooms, rice, ground beef, and tomato together in a bowl while hot with 1/2 cup cheese
  9. Stuff bellpeppers with mix and top with remaining cheese.
  10. Place in oven for 10-12 minutes (until cheese is melted throughly
