Apricot-Glazed Drumsticks

  1. Heat oven to 400F.
  2. Place chicken in single layer in shallow pan.
  3. Bake 20 min., turning after 10 min.
  4. Meanwhile, mix jam, dressing and mustard until well blended.
  5. Reserve 1 Tbsp.
  6. jam mixture for mixing with the cooked quinoa.
  7. Brush chicken with remaining jam mixture; bake 20 min.
  8. or until done (165 degrees F).
  9. Meanwhile, heat oil in large skillet on medium-high heat.
  10. Add vegetables; cook 3 to 5 min.
  11. or until crisp-tender.
  12. Add broth and quinoa; stir.
  13. Bring to boil; simmer on medium-low heat 12 to 15 min.
  14. or until liquid is absorbed, adding apricots for the last 5 min.
  15. Remove from heat.
  16. Stir in reserved jam mixture.
  17. Serve chicken with quinoa mixture.
