Hidden Vegetable Meatloaf

  1. Place all vegetables in a food processor and process until they are a fine mixture.
  2. Over medium-high heat, melt olive oil and butter.
  3. Once butter begins to start browning, add the processed vegetables and salt.
  4. After these have cooked for a few minutes, add the wine or beef stock to deglaze pan.
  5. Continue cooking and stirring for a few more minutes.
  6. Remove from heat.
  7. After allowing the mixture to cool for a couple of minutes, add the milk.
  8. Stir until combined.
  9. Add the breadcrumbs.
  10. Continue adding breadcrumbs (if needed) and stirring until mixture is a nice, thick paste.
  11. In a large mixing bowl, place the ground beef.
  12. Whisk eggs and add to the meat.
  13. After allowing the pasty vegetable mixture to cool down a bit, begin incorporating it into the meat.
  14. Add 1 cup ketchup, 2 tablespoons Worcestershire, pepper, onion powder, garlic powder, and parsley.
  15. Keep mixing until it is well blended.
  16. Get those hands dirty!
  17. Spray a broiling pan with nonstick cooking spray.
  18. Using your hands, form your meat mixture into a loaf on the sheet pan.
  19. Make the loaf around 6-8 inches wide and about 1 1/2 inches thick.
  20. In a small bowl or measuring cup, mix together the remaining 1 cup ketchup, brown sugar, and 1 tablespoon Worcestershire sauce.
  21. Slather this sauce over the whole meatloaf with a brush.
  22. Place in a 400 degrees F oven for about 40 minutes.
