Summer Squash Skillet

  1. Cut chicken into bite-sized pieces and saute for about 4-5 minutes with 1 tablespoon oil.
  2. Add summer squash with onion, salt and pepper, and one more tablespoon oil until tender (time will depend on the size of the pieces).
  3. Remove chicken, set aside.
  4. Add the green pepper and herbs to the squash, cover, and steam until tender.
  5. Top with cheese just before serving.
