Italian Lentil Wraps

  1. In a medium saucepan over medium heat, saute shallot and garlic in olive oil or cooking spray for about 2 minutes.
  2. Add lentils, tomatoes, and herbs and bring to a boil.
  3. Reduce to simmer for about 5 minutes.
  4. Salt and pepper to taste.
  5. Serve in wrap with desired garnish: shredded cheese, lettuce, olives, yogurt, etc....
