Mom's Beef Roll-Ups

  1. Beat cream cheese, mix in pickle and onion.
  2. Spread cream cheese mixture on tortilla, top with lettuce and dried beef and roll tortilla.
  3. *I use 1 piece of lettuce, sometimes 1 1/2, depending on size of the lettuce.
  4. I use 3 or 4 pieces of dried beef, depending on how much I have.
  5. Make sure you don't put too much on the tortilla, otherwise it won't roll well.
  6. Cut in about 1/2 inch pieces.
  7. Notes: This should make about 8 roll-ups depending on how much cream cheese you spread on the tortilla.
  8. You can use the bigger, burrito-style tortillas.
  9. There are many things you can subistute.
  10. I used to use turkey and cheese instead of beef, but people liked the beef better, so I stopped making the turkey roll-ups.
