Mom's Beef Roll-Ups
- 2 (8 ounce) packages light garden vegetable cream cheese spread
- 1 tablespoon pickle, minced
- 1 tablespoon onion, minced
- 8 tortillas
- 1 head romaine lettuce, cleaned and dried well
- 1 (2 1/2 ounce) jar dried beef
- Beat cream cheese, mix in pickle and onion.
- Spread cream cheese mixture on tortilla, top with lettuce and dried beef and roll tortilla.
- *I use 1 piece of lettuce, sometimes 1 1/2, depending on size of the lettuce.
- I use 3 or 4 pieces of dried beef, depending on how much I have.
- Make sure you don't put too much on the tortilla, otherwise it won't roll well.
- Cut in about 1/2 inch pieces.
- Notes: This should make about 8 roll-ups depending on how much cream cheese you spread on the tortilla.
- You can use the bigger, burrito-style tortillas.
- There are many things you can subistute.
- I used to use turkey and cheese instead of beef, but people liked the beef better, so I stopped making the turkey roll-ups.
