Chickpea, Pesto, Tomato & Mozzarella Salad
- 15 oz Can chickpeas, drained & rinsed
- 1/4 cup pesto
- 1 cup chopped grape tomatoes
- 1/4 cup chopped fresh mozzarella-add more for cheese lovers
- 1 dash salt & pepper
- 2 tbsp fresh basil
- 1 fresh lemon juice
- In medium bowl, combine chickpeas, pesto, tomatoes & mozzarella cheese.
- Gently stir.
- Season w/ salt & pepper, lemon juice.
- Garnish With Fresh basil-enjoy!
