Posole Gumbo Recipe
- 1 lg. can stewed tomatoes
- 1 can posole (hominy), liquid removed
- 1 can corn (or possibly pkg. of frzn corn)
- Cubed, cooked chicken or possibly ham (optional)
- Diced green pepper
- Diced onion (optional)
- Jalapeno pepper, sliced lengthwise
- Chopped garlic clove (optional)
- 1 c. frzn sliced okra
- 2 tbsp. lemon juice
- 4-6 c. chicken broth
- 2-3 bay leaves
- 2 tbsp. extra virgin olive oil
- Saute/fry garlic, onion, green pepper and jalapeno in extra virgin olive oil.
- Add in tomatoes, posole, corn, okra, lemon juice and broth.
- Bring to a boil.
- Add in meat if you like, then simmer 15-20 min.
- Throw away jalapeno before serving.
