Eric's Roast Pork
- 8 lbs boneless pork roast
- 1 12 gallons water
- 4 tablespoons salt
- 4 tablespoons sugar
- 1 garlic clove
- 2 bay leaves
- 5 peppercorns
- dried thyme
- 3 red onions (chopped)
- butter
- 2 cups honey
- 2 cups balsamic vinegar
- 12 lb butter
- .Bring Water, salt, sugar, garlic, cloves, bay leaves, peppercorn, & thyme to a boil.
- Let cool and Marinade pork for 12 to 24 hours.
- Roast pork at 350 degrees for 2 to 2 1/2 hours until done to your liking.
- Make sauce:.
- caramelize onions in butter, add honey, balsamic vinegar reduce until slightly thickened and stir in 1/2 lb butter.
