Brown Rice Mushroom Pilaf

  1. Heat oil in a large saucepan over medium heat.
  2. Saute chopped onion and sliced mushrooms for 5 minutes.
  3. Add brown rice and stir to coat in oil.
  4. Add water.
  5. Season with salt and pepper.
  6. Bring to a boil, then simmer for 30 minutes.
  7. Remove from heat and cover with a lid.
  8. Let it rest until all liquid is absorbed.
