Greek Vegetable Wraps

  1. Mix dressing and lemon juice.
  2. Toss mushrooms, zucchini, red peppers and onions in large bowl.
  3. Add dressing mixture; mix lightly.
  4. Place in foil-lined 15x10x1-inch baking pan.
  5. Bake at 400F for 15 minutes, stirring after 10 minutes.
  6. Cover tortillas with lettuce; top with vegetable mixture.
  7. Sprinkle with cheese.
  8. Roll up.
