Beef & Bacon Mini-meatloaves

  1. Preheat oven to 375F (190C).
  2. Grease an 8-hole, 3/4 cup-capacity, mini loaf pan.
  3. Combine ground beef, onion, bacon, garlic, egg, breadcrumbs, chives and 2 tablespoons barbecue sauce in a bowl.
  4. Season with salt and pepper.
  5. Press mixture into prepared pan holes.
  6. Bake for 15 minutes (they won't be fully cooked at this point).
  7. Meanwhile, line a large baking tray with foil.
  8. Combine tomato sauce and remaining barbecue sauce in a bowl.
  9. Turn the mini-meatloaves out onto prepared baking pan.
  10. Brush with sauce mixture.
  11. Bake for 5 to 7 minutes or until browned and cooked through.
  12. Serve with garlic mashed potatoes.
