Beef & Bacon Mini-meatloaves
- 1 3/4 pounds ground beef
- 1 small onions finely chopped
- 4 slices bacon cooked, drained and chopped
- 2 cloves garlic minced
- 1 large eggs lightly beaten
- 1/2 cup bread crumbs fresh
- 2 tablespoons chives fresh, finely chopped
- 1/2 cup barbecue sauce
- 2 tablespoons tomato sauce
- Preheat oven to 375F (190C).
- Grease an 8-hole, 3/4 cup-capacity, mini loaf pan.
- Combine ground beef, onion, bacon, garlic, egg, breadcrumbs, chives and 2 tablespoons barbecue sauce in a bowl.
- Season with salt and pepper.
- Press mixture into prepared pan holes.
- Bake for 15 minutes (they won't be fully cooked at this point).
- Meanwhile, line a large baking tray with foil.
- Combine tomato sauce and remaining barbecue sauce in a bowl.
- Turn the mini-meatloaves out onto prepared baking pan.
- Brush with sauce mixture.
- Bake for 5 to 7 minutes or until browned and cooked through.
- Serve with garlic mashed potatoes.
