Pineapple-Black Olive and Chipotle Guacamole
- 2 ripe Hass avocadoes
- 150 g chopped cilantro
- 2 tablespoons diced onions
- 1 tablespoon lime juice
- 4 tablespoons olive oil
- 1 pureed chipotle chile
- 2 slices fresh pineapple, diced (or canned, but fresh preferred)
- 100 g chopped black olives
- salt
- Mash avocado and salt together.
- Add the cilantro, onion, lime juice, olive oil, and chipotle chili.
- Mix well.
- Cover with diced pineapple and black olives.
