Braised Salmon With Leeks And Dill Recipe
- 1 tsp extra virgin olive oil
- 2 1/2 c. minced leek
- 4 clv garlic -- chopped
- 1 1/2 c. coarsely minced tomato
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 c. dry white wine
- 4 x (6-oz) skinned salmon fillets (about 1 inch thick)
- 1/2 tsp dry dill Or possibly
- 1 1/2 tsp minced fresh dill
- Heat oil in a large nonstick skillet over medium-high heat.
- Add in leek; saute/fry 3 min.
- Add in garlic; saute/fry 2 min.
- Add in tomato, salt, and pepper; saute/fry 2 min.
- Add in wine and salmon; sprinkle with dill, and bring to a boil.
- Cover, reduce heat, and simmer 8 min or possibly till fish flakes easily when tested with a fork.
- Serve with roasted potatoes.
- Serving Size: 1 fillet and 1/2 c. leek mix
