Frozen Mango Martini

  1. Combine sugar, 1/2 cup water and ginger in heavy small saucepan.
  2. Stir over medium heat until sugar dissolves.
  3. Simmer 5 minutes.
  4. Remove from heat.
  5. Cover; let steep 1 hour.
  6. Strain ginger syrup.
  7. Cool.
  8. (Can be made 1 day ahead.
  9. Cover; chill.)
  10. Puree mangoes in blender.
  11. Pour into measuring cup.
  12. Return 3/4 cup puree to blender (reserve any remaining puree for another use).
  13. Add 1/2 cup ginger syrup (reserve any remaining syrup for another use), vodka and ice cubes to mango puree in blender.
  14. Blend until smooth.
