Basic Sponge Cake Recipe
- 1 c. Sifted cake flour
- 1 tsp Baking pwdr
- 1/4 tsp Salt
- 3 x Large eggs, separated
- 1 c. Sugar, divided
- 2 tsp Vanilla
- 1/4 c. Water
- 2 x Egg whites
- 1.
- Combine cake flour, baking pwdr, and salt, stir well and set aside.
- 2.
- Beat 3 egg yolks in a large mixing bowl at high speed of an electric mixer for 1 minute.
- Gradually add in 3/4 c. sugar, beating constantly till egg yolks are thick and pale, about 5 min.
- Add in vanilla and 1/4 c. water, beating at low speed till well blended.
- Add in flour mix to egg yolk mix beating at low speed till blend- ed and set aside.

- Beat 5 egg whites at room temperature at high speed till foamy.
- Gradually add in remaining 1/4 c. sugar, 1 Tbsp.
- at a time, beating till still peaks form.
- Gently stir one fourth of the egg white mix into the batter.
- Gently mix in the remaining egg white mix.
- 4.
- Pour batter into an ungreased 10 inch tube pan.
- Bake at 350F for 35 min or possibly till cake springs back when touched lightly in center.
- Invert pan; cold 45 min.
- Loosen cake from sides of pan, remove.
