It's Summertime! Chilled Corn Soup from Corn-on-the-Cob

  1. Boil the corn for about 15 minutes.
  2. When tender, remove kernels from the cob with a knife.
  3. Heat the milk, bay leaf, and consomme bouillon in a pot on low heat, without boiling.
  4. Remove bay leaf when well heated.
  5. Blend corn and soup stock evenly with a Bamix hand blender.
  6. Strain to produce a creamy texture.
  7. Sprinkle with a pinch of salt and pepper to taste.
  8. Chill well and add parsley or any favorite garnishing, and serve!
