Apricot Chutney

  1. Prepare jars, lids and bands.
  2. Simmer all ingredients together until apricots are soft, about 15 to 20 minutes.
  3. Transfer apricots to prepared warm jars.
  4. Boil the rest of the chutney until it is thick and syrupy.
  5. Pour over apricots leaving a 1/2" headspace.
  6. Check for air bubbles.
  7. Process in a boiling water bath for 15 minutes.
  8. Adjust time according to your altitude.
