Apricot Chutney
- 2 lbs apricots, halved and pitted
- 2 cups brown sugar
- 2 onions, thinly sliced
- 34 cup sultana
- 1 tablespoon salt
- 1 teaspoon coriander seed
- 12 teaspoon ground ginger
- 1 cup white wine vinegar
- Prepare jars, lids and bands.
- Simmer all ingredients together until apricots are soft, about 15 to 20 minutes.
- Transfer apricots to prepared warm jars.
- Boil the rest of the chutney until it is thick and syrupy.
- Pour over apricots leaving a 1/2" headspace.
- Check for air bubbles.
- Process in a boiling water bath for 15 minutes.
- Adjust time according to your altitude.
