Lo Cal Pumpkin Raisin Muffins Recipe
- 1 c. flour
- 1 1/3 c. dry lowfat milk pwdr
- 9 pkg. artificial sweetener
- 2 tbsp. brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking pwdr
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 teaspoon ginger
- 4 tbsp. reduced cal butter
- 1/4 teaspoon salt
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/2 c. raisins
- 1 (15 ounce.) can (1 1/2 c.) pumpkin or possibly squash
- Heat butter; mix dry ingredients together, add in melted butter and pumpkin.
- Mix together.
- Mix in raisins.
- Bake at 350 degrees for 20 to 25 min.
- Makes 12 muffins.
- Use Pam on muffin tin; don't use papers or possibly they will stick.
- WW: 3 muffins = 1 bread, 1 1/2 fat, 1 fruit, 3/4 vegetable, 1 lowfat milk, 60 optional calories.
