Tasty Quinoa Salad

  1. Drain the quinoa then put it in a pot with the stock.
  2. Bring to a boil on the stove top, reduce to simmer, cover and cook for 1015 minutes until done.
  3. Quinoa is done when the water is gone.
  4. You may also cook quinoa in a rice cooker the same way that you would cook rice.
  5. Allow quinoa to cool.
  6. Combine all the other ingredients with the cooled quinoa and serve.
  7. Inspired by a weight loss recipe that I was given by the nutritionist at work.
