Pancakes
- 1/3 c. nonfat dry milk powder
- 2 Tbsp. plus 1 1/2 tsp. enriched flour
- 1/4 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 Tbsp. margarine, melted
- 2 eggs, separated
- 2 tsp. sugar
- Sift together dry milk, flour, cinnamon and salt.
- Set aside. Combine margarine and egg yolks.
- In a medium bowl, beat egg whites with sugar until stiff.
- Lightly fold yolk mixture into whites, then gradually fold in sifted ingredients.
- Let stand 5 minutes.
- Heat nonstick skillet over medium heat.
- Drop batter, 1 tablespoon at a time, into skillet.
- Lightly spread with back of spoon to form pancakes.
- Cook until underside is browned; turn pancakes.
- Cook until underside is browned.
- Turn pancakes and cook 1 minute longer.
- Serve hot.
- Makes 2 servings.
