Pancakes

  1. Sift together dry milk, flour, cinnamon and salt.
  2. Set aside. Combine margarine and egg yolks.
  3. In a medium bowl, beat egg whites with sugar until stiff.
  4. Lightly fold yolk mixture into whites, then gradually fold in sifted ingredients.
  5. Let stand 5 minutes.
  6. Heat nonstick skillet over medium heat.
  7. Drop batter, 1 tablespoon at a time, into skillet.
  8. Lightly spread with back of spoon to form pancakes.
  9. Cook until underside is browned; turn pancakes.
  10. Cook until underside is browned.
  11. Turn pancakes and cook 1 minute longer.
  12. Serve hot.
  13. Makes 2 servings.
