Easy Leftover-Turkey Curry!
- 4 tablespoons butter
- 1 cup onion, diced
- 12 cup celery
- 1 garlic clove, minced
- 2 tablespoons flour
- 1 teaspoon red pepper flakes, crushed
- 1 tablespoon curry powder
- 2 cups chicken broth
- 1 cup heavy cream
- 1 12-2 cups leftover roast turkey, cut into bite-sized pieces
- 14 cup fresh parsley, minced
- 1 cup red seedless grapes, halved
- salt and pepper
- Heat butter in large skillet and saute' celery, onion, garlic, and red pepper.
- Add flour, stir until thick, and slowly add broth and cream to make a medium-thick sauce.
- Add curry powder, turkey, parsley, and grapes, lower heat.
- Simmer until heated through.
- Serve over rice.
