Simmered Chicken Wings
- 300 grams Chicken wing mid-sections (Cut in half)
- 1 tsp Sesame oil
- 1 1/2 tbsp Soy sauce
- 1 tbsp Sake
- 1 tbsp Mirin
- 1 tbsp Sugar
- 1 tbsp Black Vinegar (You can use whatever vinegar you like.)
- Combine all of the flavoring ingredients together.
- Heat a frying pan on medium heat.
- Pour sesame oil into the frying pan and start to cook the chicken with the skin side facing down.
- Once they turn golden brown, flip them over.
- Cover the pot with a lid and reduce the heat setting to low.
- Steam fry the chicken.
- Once about 7-8 are golden brown, remove the lid.
- Add the sauce you made in Step 1 and cook it till the sauce cooks down.
- While it cooks down on a low heat setting, shake the frying pan from time to time.
- This helps coat the chicken.
- Reduce the sauce until it is nearly gone.
- While doing so, shake the frying pan and move the wings around so that they are evenly coated.
- Once it's done cooking down, they're ready.
- If you don't want to cook the sauce down till it looks like this, that's fine too.
- This cooks down quite quickly, so be sure to cook it on a low heat setting so it doesn't burn.
