A Meaningful Beaning Full Bean Salad Recipe

  1. Cook string beans in boiling salted water till fork tender (then put in ice bath), drain till dry.
  2. In a large pasta bowl add in string beans, chickpeas, kidney beans, garlic, oregano, onion, olives, celery, basil, parsley.
  3. Add in salt, red and black pepper to taste.
  4. Mix well.
  5. Whisk together extra virgin olive oil, lemon juice, vinegar, toss with salad till combined.
  6. Let sit for 1/2 an hour, mixing every 10 min to get all ingredients coated with mix.
  7. Refrigeratefor at least 1 hour and serve; salad can be made 1 day ahead of time.
  8. This recipe yields 10 servings.
