Rosti Casserole with Fried Eggs
- 2 Tablespoons Flour
- 1- 1/4 cup Fat Free Greek Yogurt
- 1- 1/2 cup Turnip, Grated
- 1- 1/4 cup Gruyere Cheese, Grated
- 13 cups Butter, Melted
- 1/4 cups Fresh Chives, Chopped
- 1- 1/4 teaspoon Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 1/4 teaspoons Ground Nutmeg
- 1 package (30 Oz. Size) Frozen Shredded Hash Brown Potatoes, Thawed
- Cooking Spray
- 8 whole Large Eggs
- Preheat oven to 400 F.
- In a large bowl, add flour, yogurt, turnip, Gruyere cheese, melted butter, chives, salt, pepper, nutmeg and thawed hash-browns.
- Mix well until thoroughly combined.
- Spread the mixture into a 9x 13 glass baking dish.
- Bake for 40 minutes.
- In a large frying pan coated in cooking spray, fry the eggs over medium to medium-high heat until you reach your desired doneness.
- Cut casserole into 8 pieces and top each piece with a fried egg.
- Serve immediately.
