Loaded Potato Fritters

  1. Stir together both kinds of potatoes with flour.
  2. add salt and pepper to taste.
  3. Stir in bacon, cheese and scallions.
  4. Roll tablespoon of mixture into ball and dip in egg, then roll into breadcrumbs.
  5. Repeat with all of mixture.
  6. Deep fry at 350F until brown and crispy on the outside.
  7. Remove from oil and place on paper towel to absorb excess oil from getting.
  8. Let cool several minutes before serving.
  9. Serve with ranch our honey mustard dipping sauce.
  10. Makes 20 fritters.
