Cincinnati Empress Chili
- 2 teaspoons olive oil
- 2 onions, chopped finely
- 4 cloves garlic, minced
- 3 cups vegetable stock
- 2 tablespoons apple cider vinegar
- 1 large bay leaf, crushed
- 5 whole allspice berries
- 2 teaspoons salt
- 3 tablespoons chili powder
- 1 teaspoon cocoa
- 17 ounces tomato sauce
- 1/2 teaspoon cayenne pepper, to taste
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 can pinto beans, drained
- 1/2 lb tofu, frozen,thawed,& crumbled
- In large heavy pot, over medium-high heat, heat oil and saute onions for 8 to 10 minutes.
- Add remaining ingredients.
- Bring to a boil, then lower heat and simmer for 1 1/2 hours.
