Apple and Green Tomato Mincemeat
- 12 cups green tomatoes chopped
- 16 cups apples unpeeled, cored
- 4 cups golden raisins chopped, sultanas
- 2 cups currants
- 1 cup vinegar
- 2 tablespoons lemon zest
- 2 tablespoons orange zest
- 6 cups sugar
- 2 tablespoons cinnamon
- 2 teaspoons nutmeg
- 3 teaspoons salt
- 2 pinch cloves
- 8 tablespoons margarine
- Chop in processor apples and tomatoes.
- Add remaining fruit and process.
- Blend everything in a large pot.
- Cook slowly for 1 1/2 to 2 hours.
- Bottle and process in hot water bath.
